Beachwood Pizza Honors Late Chef John Ash with Special Menu
UPDATE: Beachwood Pizza & Beer in Huntington Beach pays tribute to the late Chef John Ash, known as the father of Wine Country cuisine, with a special limited-time menu from October 23 to November 2. This unique offering draws directly from Ash’s renowned cookbook, “From Earth to Table,” celebrating his legacy and innovative approach to sustainable cooking.
The award-winning establishment will feature three new dishes, including the Earth To Table Sourdough Pizza, a wine-braised chicken Orecchiette, and a delightful Spiced Wine Poached Pear dessert. Each dish is crafted with fresh, seasonal ingredients, reflecting Ash’s commitment to local sourcing.
Gabriel Gordon, owner of Beachwood, expressed profound admiration for Ash, stating, “John was the godfather of wine country cuisine and a huge influence on me growing up in Santa Rosa.” Gordon reminisced about Ash’s impact on his culinary journey, calling him “a celebrity chef” but also “my best friend’s dad.”
Chef Ashley Arias designed the new menu items, inspired by Ash’s teachings. “I looked at the book and what ingredients he was using,” Arias noted. “This is a good foundation, and I switched up some ingredients to create a new world cuisine.”
The featured dishes include:
– **Earth To Table Sourdough Pizza:** This pizza is loaded with Bechamel sauce, mozzarella, Dutch brie, Canadian bacon, portabella mushrooms, and caramelized onions. Arias described it as “like putting a charcuterie board on a pizza.”
– **Wine-braised Chicken Orecchiette:** This dish combines creamy wine-braised chicken, pasta, herbed Shiitake mushrooms, sun-dried tomatoes, and parmesan. Arias emphasized its “super herbie, super savory” flavor.
– **Spiced Wine Poached Pear:** Utilizing the wine Ash often referenced in his writings, this dessert features pears poached to perfection, offering a tender yet textured experience.
