Climate Change Hits Italy: Burrata Production Faces Crisis
UPDATE: Italy’s beloved burrata is at risk as climate change wreaks havoc on dairy production. Cheesemakers in the Puglia region are facing an urgent crisis due to rising temperatures and droughts, leading to a significant drop in milk supply.
Angelantonio Tafuno, a fourth-generation cheesemaker, revealed that his family’s traditional methods are being challenged. On a recent fall afternoon, Tafuno, aged 32, emphasized the need for a more sustainable approach to dairy farming. “We are running a little too much,” he stated, advocating for a shift towards artisanal cheese production that requires less milk.
The situation is dire. Extreme heat linked to climate change has not only caused devastating droughts and catastrophic fires across Italy but has also led to lower milk yields from cows. In Puglia, which is responsible for a majority of Italy’s creamy burrata, cheesemakers like Tafuno are adapting to these challenges.
His herd of Podolica cows, a breed known for producing less milk than standard dairy cows, has become a focal point of his strategy. Tafuno invested in 30 head of Podolica two years ago, recognizing the need to innovate in response to the ongoing climate crisis. “Developing cheese varieties that require less milk is a way to face what is happening now with climate change,” he explained.
As Puglia battles these extreme conditions, local cheesemakers are scrambling to find solutions. The decline in milk production poses a serious threat not only to the livelihoods of farmers but also to consumers who cherish Italy’s rich culinary heritage. The impact of reduced burrata availability will be felt across the globe, as demand for this creamy delicacy remains high.
What’s next? The urgency for change is palpable. Cheesemakers are now exploring new artisanal formulations and specialty aged cheeses that can be produced with limited milk supplies. The goal is not just to survive but to thrive in an increasingly unpredictable climate.
