The pavlova bar serves as a vibrant centerpiece for any gathering, encouraging a DIY approach to dessert. Guests can assemble their creations by layering the components, resulting in a visually appealing and delicious treat that is sure to impress.

Ingredients and Preparation Steps

To prepare this festive dessert, the following ingredients are needed to make 24 meringues. The meringues can be made in advance, up to three days prior to the event.

**For the meringues:**
– 140g egg whites (about 4 large eggs)
– 220g caster sugar
– 2 tsp instant coffee powder dissolved in 1 tsp hot water
– 1 tsp cornflour
– 1/2 tsp white vinegar
– 1 tsp vanilla extract
– 1 pinch fine sea salt
– Cocoa powder for dusting
– Edible gold leaf (optional)

**For the espresso brandy cherries (can also be made in advance):**
– 400g frozen black cherries
– 60g light brown sugar
– 60ml black coffee
– A pinch of sea salt
– 2 tbsp brandy or coffee liqueur (such as Kahlúa or Tia Maria)
– 1/2 tsp vanilla extract

**For the whisky caramel (up to three days ahead):**
– 300g caster sugar
– 60ml water
– 150ml double cream
– 50ml whisky

**For the espresso mascarpone cream (made on the day):**
– 300ml double cream
– 150g mascarpone
– 2 tsp coffee grounds
– 1 tsp vanilla extract
– 1/2 tsp cinnamon

To begin, preheat the oven to 150°C (130°C fan) or 300°F. Line two large baking trays with parchment paper. In a clean bowl, whisk the egg whites with an electric mixer on medium-high speed until soft peaks form. Gradually add the caster sugar, whisking until thick and glossy.

Next, incorporate the coffee, cornflour, vinegar, vanilla, and a pinch of salt, mixing just until combined. Use a small amount of meringue to secure the baking paper to the trays, then use two spoons to dollop 12 meringues of approximately 5cm in diameter on each tray. Create a shallow dip in the center of each meringue using the back of a teaspoon.

Bake for around 1 hour and 15 minutes until the meringues are crisp and dry to the touch, yet slightly soft inside. Once baked, turn off the oven and leave the door ajar to cool for about an hour. Store the cooled meringues in an airtight container for up to three days.

Creating the Toppings

For the espresso brandy cherries, combine the frozen cherries, light brown sugar, black coffee, and a pinch of sea salt in a saucepan. Bring to a gentle simmer, stirring until the sugar dissolves. Continue to simmer for five minutes until the cherries are tender and the liquid slightly reduces. Remove from heat and add the brandy and vanilla extract, allowing it to cool completely. This syrup can be stored in a jar in the refrigerator for up to three days.

To prepare the whisky caramel, mix the sugar and water in a saucepan over low heat, stirring occasionally until dissolved. Increase the heat until the caramel reaches a deep amber color, then remove from heat and carefully add the double cream. Return to low heat, stirring until smooth, and add the whisky. Transfer to a jug and refrigerate for up to three days, reheating gently before serving.

The espresso mascarpone cream is made by combining all the ingredients in a bowl and beating on medium-low until soft waves form. Chill until ready to serve.

To assemble the pavlova bar, dust the meringues lightly with cocoa powder. Serve the espresso mascarpone cream, brandied cherries, and whisky caramel in separate bowls, allowing guests to build their own dessert. This interactive approach not only enhances the festive atmosphere but also provides a stunning visual display, especially when finished with a touch of edible gold leaf for a sparkling New Year’s touch.
